When people who are new to meatless cooking ask for recipe suggestions, I often point them towards La Dolce Vegan. It’s full of simple, healthy, one-pot vegan dishes, many of which are pure comfort food. The recipes are a painless way to ease into a meat-free existence.
When I met the husband, he hadn’t been exposed to much vegetarian cooking. He is British, after all. He ate his meat with a side of meat, with not a vegetable to be found (and no, dear, French fries don’t count as a vegetable).
During our courtship many years ago we made this casserole together all the time. It’s just plain delicious – with fresh, lightly flavoured vegetables topped with a well-seasoned crispy topping. I’ve made this with many different vegetable combinations and it always turns out well. Casseroles are great like that, aren’t they?
